Introductory course to Japanese cuisine

Under the expert guidance of chef Toshiko Taura, ROC35 invites you on a journey to Japan to discover the delights of its cuisine. In our first workshop we will learn all the secrets of how to prepare sushi.

ROC35 An introduction to Japanese gastronomy

Japanese culture gives special attention to a gastronomy that is world-renowned for being tasty, surprising, elaborate and healthy. A workshop proposal, during which you’ll learn to cook typical Japanese dishes like sushi, adapting their preparation to the household setting in a way that is simple (especially in terms of the cut of fish) and more economical.

Recipes

Japan´s culinary tradition is extensive but, for this first foray into its cuisine, ROC35 will focus on two of its most representative products, rice and fish.

  • Dashi (basic extract for broths and soups)
  • Technique for washing and cooking rice
  • Sushi-meshi (sushi rice)
  • Salmon and tuna maki
  • Osuimono (Japanese consommé)
  • Sunomono of cucumber and wakame in vinaigrette
  • Final surprise

The dishes will change according to the seasonality of the ingredients.

¿Cómo funciona el taller?

ROC35’s workshops are dynamic and participative – all participants will prepare the dishes right from the start. ROC35 uses only local, organic products, as our aim is to promote a quality, sustainable and healthy diet. At the end of the workshop, participants will enjoy a dinner in a unique space, in an informal and relaxed setting, where they can share the dishes cooked.

Material included

The cost includes: the class, the necessary material, a recipe book and the products for preparing and sampling the dishes.
